This might be a hot take, but you probably have only 3 or so options for Linux:
Debian Based, RedHat based, Arch. Most everything else is a spin on these. Reading your comments above I recommend Debian.
As for UI, Gnome it probably more flexible than you mentioned, I hope I'm not repeating known information but I haven't seen this in the thread, did you get to mess around with https://extensions.gnome.org/ ?

Yes out of the 3 I plan to go back to Debian based distro. But I don't want vanilla Debian at this point, I prefer to get the extra features and polish added by the "daughter" distros.

With the addition that extensions may break upon upgrading (which happened to me on the last upgrade with some basic extensions such as adding tray items...)
