The Conclusion of the Crumb

The difference between the two crumbs could just as easily be attributed to shaping/proofing variances.
Top: Buckwheat starter, All Purpose/Whole Wheat levain
Bottom: BW starter, AP/BW levain
The BW levain slice is slightly airier with well distributed larger bubbles than the WW slice. It does have a slightly nuttier taste than the WW one as well although they are quite similar.
I couldn't tell them apart in a blind taste test. ๐คทโโ๏ธ
I trimmed the catnip plants yesterday and tossed the clippings in this bin. Got distracted by something shiny and never took them out to the composter. Guess who found them and has possibly seen God or bugs crawling on the ceiling? #cats #CatsOfMastodon #MaineCoon
