I only started making burgers a couple of months ago, and I like them better than anything I've had in town, even at the most expensive and exclusive places. Because the process is extremely simple, it cannot be my tremendous skill. I suspect they must be skimping on the ingredients.

It's also possible that chefs at those places consider burgers beneath them, and offload their making to some interns, or worse, minimum wage helpers.

I don't know the situation might have improved recently, but for… reasons I tend to thing that it only got worse 😅

No, not all food is bad, with burgers I think it's more of an attitude problem — a lot of people in Russia were introduced to burgers at McDonalds, so they indeed keep perceiving them as fast food. The most absurd thing, when I invited a couple of ex-colleagues to a nice diner to treat them burgers proper and change their mind about the whole fast food thing…

They started complaining: "Why is it taking them so long?!!!"— as if they were supposed to just microwave them 🤣
Many cafes/bars just follow suit and hardly put any effort into making their burgers good 🤷

I go to steakhouses for decent burgers here. They at least understand meat.

There used to be a whole subculture here around barber shops, craft beer and good burgers — these places kept popping up here and there, burgers and steaks were generally good, but as those were small businesses and the economic situation kept shifting rapidly, there was no way to tell how long they would last. Sometimes you come to a place that was nice just a few months later and it's already something else 😅
