You can be fired any time (not if it's discriminatory ofc) 
Pros of living in a state with at will employment:
Two-week notices don't exist; you can just leave

I live in an at will state and for me personally, that is the way I like it.
Two weeks is still generally accepted as an informal polite rule, but there is nothing stopping people from not giving notice. Other than the general rule of don't burn bridges behind you.
