Two things conflated here
1) adding meta-data for "last-edited-with"
2) assuming that users want that meta-data to be used for icon selection
Consider an alternative for 2:
Click opens a popup menu similar to Android (when I tap a link I'm always prompted to choose a browser, as I never set a default)
This popup could present things the user might want to do, not only VIEW, EDIT, but also PRINT, COMPRESS, EMAIL or COMPRESS+EMAIL...
Get fancy, make likely actions prominent.

So, "last-edited-with" would become the preselected, highlighted option.
I think that would improve UX much further than imposing the view that a app-specific icon is somehow superior.
