I don't believe in that theory that the use on gas does change a got pot (beside the changes inside that can help to make it even better, because stuff does stick even less).
The only observation I made is that some pots (in my opinion the cheaper ones made of aluminum) do "receive" a lot less power from the induction field and need significantly longer to heat up.
