The Conclusion of the Crumb

The difference between the two crumbs could just as easily be attributed to shaping/proofing variances.
Top: Buckwheat starter, All Purpose/Whole Wheat levain
Bottom: BW starter, AP/BW levain
The BW levain slice is slightly airier with well distributed larger bubbles than the WW slice. It does have a slightly nuttier taste than the WW one as well although they are quite similar.
I couldn't tell them apart in a blind taste test. ๐คทโโ๏ธ
