PopOS looks fun — and if you don't want to tinker with it a lot, I'd go with that, I've heard lots of good things about it.
I'd of course put Void on it — because that's what I use everywhere, it runs fine on my old Macs. Once you set everything up it's like a very sharp tool with no nonsense, but if you've never used it I do not recommend it — it's rather… unusual compared to your average "user-friendly" distro, takes some time to get accustomed to.
