It takes somewhat more oil to fry the eggplant and cheese adds fat on top of that, but other than that, it's perfectly healthy 😉

@m0xee @yngmar Don't live using outdated misinformation rules ;) Fat is not your enemy. Seed oils and carbohydrates are the thing to avoid. So if you used olive oil to cook this instead of seed oil, it could be a perfectly fine keto-healthy breakfast. ^^

@hil Oh, don't get me wrong, I don't think all fats are bad, but it's still better to maintain proper balance. Like I said, eggplants take a lot of oil in when fried — like a sponge. And all that melted cheese…
Calling it VERY unhealthy was an exaggeration of course, a joke. It's fine to enjoy such meal every now and then, but not every day IMO 🤷
