@BarbaraEdwards I would suggest something hearty with protein and/or grains such as a chickpea salad with potatoes, roasted red peppers and other stuff (olives, artichoke hearts, cherry tomatoes, red onions..) or the middle eastern rice and lentil dish sweetened with lots of caramelized onions called mujadara. @madamscientist @BarbaraEdwards Red cabbage (warm) is very common as side dish on the Swedish Christmas table. I suppose it should be fine as side dish also to vegetarian food. Here you can buy it ready only to heat up. I attach a link to one typical recipe (if you are interested, I hope a translator will do it, or else I can add a quick translation another day).
