Burning a kilogram of jet fuel produces about 3kg of CO2 (https://www.offsetguide.org/understanding-carbon-offsets/air-travel-climate/climate-impacts-from-aviation/co2-emissions/). I guess this is because the oxygen comes from the air, not from the fuel, and it accounts for about two thirds of the mass. Also, the figure of 51 tons likely accounts for the emissions related to producing and transporting said fuel.
