I want to try out XMPP but I'm not sure which server to use, whether I trust myself to host it myself, and can my parents use it without resorting back to Signal.
On clients, for Android i know of Conversations, but the "paid on Play, free on F-Droid" part kinda worries me as my parents don't have F-Droid and I don't think they'd want to pay for a chat app.
For iOS I have no idea, and I'd definitely need an iOS client if I need to use XMPP for my family. Any advice?

As iOS clients I know Siskin, Chatsecure and Monal. All of three support OMEMO encryption but Siskin is the only one to support audio/video calls (not encrypted).
For Conversations maybe you could install F-Droid on your parents' phone ? There are alternatives like Xabber, Blabber but I don't really know them (I have not an Android device)
