Most of the apps I used to get from F-Droid I get through Zapstore now, which basically grabs them directly from the developer's project server, such as GitHub or GitLab.
Zapstore publishes Nostr release events for apps where the developers don't release their own app over the Nostr protocol, so most apps that are available on F-Droid are available thanks to that.
F-Droid could do the same.
You don't host over Nostr, you publish and sign release events. The apps are hosted wherever. So F-Droid could sign and publish release events for your rebuilt and verified APKs.
As far as HTTP vs NOSTR, I don't know. Nostr runs over WSS and/or TOR, and is similar to RSS with enhanced features.
